We use only authentic small batch baking methods and extended natural fermentation, where some loaves can take up to 72 hours. We choose to ferment our doughs for a long time in order to make bread that is not only more delicious but also better for you. The long fermentation creates great flavor and texture and also helps break down the starches and gluten, making our breads easier to digest. izzio artisan bakery is a family-owned Colorado bakery and we have been baking traditional organic sourdough breads since 1994. We only use ingredients that have been carefully sourced from our local farmers and millers. Knowing where all of our grains are grown and milled gives us 100% traceability from grain to loaf. This is important because we rely on the quality of only three basic ingredients, flour, water, and salt. We make each loaf in small batches that are given the time and space to ferment slowly and naturally. Only by following this ancient baking process are we able to create the deep, elemental flavors that Mother Nature’s bounty offers. There are no shortcuts to making delicious, naturally fermented, organic sourdough breads and we believe our efforts make eating bread healthier and more enjoyable.
