Pagnotta

his bread is a result of a 12 hour primary bulk fermentation at low temperatures creating a distinct, bold and sometimes a sharp acid balance. Pagnotta is almost ½ whole grain and 10% spelt with a touch of Colorado local wildflower honey. It’s moist, chewy and particularly long lasting.
